The Paella of rice, chorizo, saffron, chicken, linguica, and a mix of roasted tomatoes, poblano peppers, sweet peppers, garnished with peas and cilantro are the layers of flavors for this Paella. To compliment these flavors Chef Posada has created a seafood medley of mussels, shrimp, calamari and clams in a brothy New Mexico chile rojo giving this Spanish dish his signature flavors.
